Bethenny’s Vegan Taco Recipe

According to Skinny Girl Bethenny, its National Taco Day!

Here is her recipe:


  • 1 pound ground meatless crumbles (I use Yves)
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Tabasco sauce
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon red pepper flakes
  • 4 whole wheat crunchy taco shells

Taco Topping Options:

  • Salsa verde
  • Guacamole
  • ¼ heart of romaine lettuce, shredded
  • 1 cup vegan sour cream
  • 1 cup vegan shredded “cheese”
  • Chopped tomato


  1. Spray a nonstick skillet with cooking spray and put over medium heat.  Place meatless crumbles in pan.  Add all the other ingredients, sauté to warm and combine flavors. Stirring and breaking up the meat with a wooden spoon or spatula, until the meat is browned.  Set aside.
  2. Meanwhile, bake the tortilla shells according to the instructions on the package (generally about 15 minutes)
  3. To serve, put the meat, tortillas and toppings on the table and pass the plates.  Everyone can enjoy assembling his or her own taco.

Hello Blog, Remember me?

OMG I can’t believe it has been SO long since my last post! I’m the worst blogger ever! I’ve had so much going on lately. Work was really busy for a while, my sister came and visited me in Virginia, we had a wedding shower in Louisiana. I finally have a few minutes today to write… for fun! I have ZERO recipes to share at the moment. But I do plan on making pumpkin soup next week! And potato soup for Corey soon… Neither of which will be vegan… Maybe I’ll discover a vegan option… Maybe not.

So, for this post I just want to share a few things from the last month that I have been MIA. I’ll post a great work out after!

I NEED CANDY-Swedish Fish? Vegan Approved!

Last night after dinner, I got a major sugar craving- SWEDISH FISH! So, while I made the carnivore his spaghetti and meat sauce, he went to the store and picked me up some CANDY! I was like an excited little kid when he got back with the glorious bag of Swedish Fish! and the bag of gummy worms. and the bag of sour gummy worms. But THEN I thought, oh shoot- are these vegan? Certainly, they must be! It’s CANDY- there can’t be any animal products! Its not chocolate! So, I flipped the bag over and read the ingredients:

sugar (vegan), invert sugar (sugar’s vegan), corn syrup (corn is vegan), modified corn starch (vegan corn again), citric acid (citrus stuff is definitely veg), white mineral oil (minerals-totes veg), red dye 40 and carnauba wax (uhh yea that sounds vegan, too!). Swedish fish are totally VEGAN!

AND THEN I found this gem… a LIST of ALL kinds of vegan candies and snacks! And its from PETA so you KNOW it must be true!

This is my work out for the day!


Do 25 each or 50 seconds work, 10 second break

  • Run in Place with Light Dumbbells
  • Bicep Curls with Heavy Dumbbells
  • Hammer Curls
  • Single Arm Dumbbell Swings (Alternate Arms at Top)
  • Up & Twist (Combination between Bicep Curls and Hammercurls)
  • Double Twist (Up & Twists but reach behind you with palms facing ceiling when you come down)
  • Concentration Curl (make a Triangle in front of you, make fists facing chest)
  • Dumbell Thrust (like kettle bell swings)
  • Tricep Kick Back (1 arm at a time)
  • 1 Arm Tricep Extension (Over head and behind)
  • Leaning Tricep Extension (same as above with lean with it)
  • Triangle Push Ups

Abs: 50 seconds work, 10 second rest- 3 rounds

  • Kneeling obliques
  • 1- legged Knee-Ins
  • Diagonal Reach
  • Side Plank Drops, Star Plank, Leg Forwards, Star

Je Suis Trop SEXY Pour Cette Chemise

Remeber that song! “I’m too sexy for my shirt, too sexy for my shirt, too sexy for my shirt, too sexayyyy!” It’s been in my head all day long…

Here’s my work out for the day- I’ll be way too sexy pour cette chemise after this:

50 seconds work, 10 seconds rest- 2 rounds

1) Surfer Kick Out, 2 Jump Squats, 2 Tuck Jumps

2) 5 Mountain Climbers, 5 Star Jumps

3) 2 Forward Lunges 2 squat and press 2 upright rows

4) 2 pushups come up to a burpee, jump, 1 tuck jump

5) 5 Squats 10 High Knees using the pink (using medicine ball)

6) Exploding Push Up (using medicine ball)

7) 5 Switch Lunges 2 around the worlds (using medicine ball)

8) Plank Jump Overs (jump legs side to side in plank position)

Run for 30 minutes before- 10 minute interval sprints, 10 minute hill intervals, 10 minute run/jog/uphill walk

I might add some jump roping in today


50 Seconds work, 10 Seconds Rest- 3 Rounds

1) Side Plank Drop Downs (Left Side)

2) Bicycle abs, Tuck abs, Down

3) Side Plank Drop Downs (Right Side)
